Anticuchos de Corazón (Peruvian Beef Heart Skewers)

Anticuchos de Corazón are one of my favorite Peruvian dishes! A tasty street food that we couldn’t get enough of during our trips to Peru, these skewers are marinated in a special blend of spices and herbs, then grilled over wood or charocal to perfection.

The heart of this dish (pun intended!) is the rich, tender beef heart, which is complemented by the bold flavors of our famous Peruvian Inca Blend. It’s smoky, savory, and just the right amount of tangy. 

Whether you’re a fan of adventurous eats or just craving an authentic taste of Peru, Anticuchos de Corazón are sure to impress. This dish is a true celebration of Peru’s rich culinary tradition and will transport your taste buds to the lively streets of Cuzco & Lima!

Ingredients:

  • 1 lb beef heart (trimmed, cleaned, and cut into strips)
  • 4 tbsp Peruvian Inca Blend
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 cloves garlic (minced)
  • 2 tbsp fresh lime juice
  • 2-3 wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before use)
  • Side of potato or corn to serve with along with spicy Peruvian sauce!

Instructions:

1. Prepare the Marinade:

  • In a large bowl, combine the Peruvian Inca Seasoning, red wine vinegar, olive oil, & garlic.
  • Mix well to form a marinade. Adjust the seasoning to taste if needed.

 

2. Marinate the Beef Heart:

  • Add the beef heart cubes into the marinade, ensuring they are fully coated.
  • Cover the bowl and let it marinate for at least 2 hours, or overnight for maximum flavor.

 

3. Prepare the Skewers:

  • Thread the marinated beef heart cubes onto the skewers.

 

4. Grill the Anticuchos:

  • Preheat your grill or grill pan to medium-high heat.
  • Charcoal/wood fire is the BEST
  • Grill the skewers for about 2-3 minutes per side, or until the beef heart is cooked through to your desired doneness (traditionally, anticuchos are grilled to medium or medium-rare).

 

5. Finishing Touches:

  • Once grilled, remove the skewers from the grill and squeeze fresh lime juice over the meat.
  • Garnish with chopped cilantro for a fresh burst of flavor.

 

6. Serve:

  • Serve your Anticuchos de Corazón with boiled potatoes or corn on the side for a traditional Peruvian experience and don't forget the spicy sauce!

Pro Tips:

  • For an even smokier flavor, grill the anticuchos over charcoal or add some wood chips to your grill.

  • Serve them with a spicy aji sauce or a creamy cilantro sauce on the side.
